Can you have a kid weigh in for a multi-dual and have them only compete in one dual. Then count it as a single dual meet for that athlete while it counts as a multi-school event for the rest of the team?

I don't think so.  I think it would go as him competing in a multi team event.

If he gets pinned, does it count as an official match?   Wink

I don't know the situation or answer but believe that one team can consider it a multi event and others a series of duals. If that team considered it a multi, it would seem a multi for each member but not sure it is spelled out that way.
