Title: Kelvin Gastellum misses weight. How does this happen?

I just read that Kelvin Gastellum missed his weight, and will not be fighting in UFC 205.  He's been known to have weight management issues and a dietician was hired.
I do think some of the weight cuts in the UFC are crazy.  I remember walking past Kenny Florian in the airport when he was fighting at 145, wondering how in the blazes he got to that weight.  At that time I was walking around at 175-180, and he looked to be the same size if not bigger. He seems like a smart guy, and probably has the weight management down to a science.
Kelvin Gastellum, on the other hand, seems like a disgrace.  He looks like he's got some body fat on him and with proper management, would have absolutely no problem making weight.  The same goes for Johny Hendricks.  
I know it's not fun doing weight management, but it's not rocket science.  In the one fight I decided to do, I was working on the road as a network engineer and got the call that someone dropped out. My career was not in fighting but I loved the sport.  23 lbs over 2 weeks out, I still managed to be under weight.  Eat the veggies, work out, and you'll make it.  Its not fun but pretty simple.

Am I wrong in thinking that these guys have no place making money inside a ring when they can't even make weight?

And how is it that, two former wrestlers that used to have to make weight on a weekly basis, struggle to make the "cut" for just a few fights a year?   How did they forget to do what used to be second nature?
